Easy Egg Salad
5 hard boiled eggs (Place eggs in a pot, add water, cover and bring to a boil. remove from heat, leave covered for 12-15 minutes. Let cool slightly and carefully peel)
1 celery, diced
2 tbsp fresh parsley, chopped
3 tbsp reduced fat mayo
1 tsp onion flakes
salt and pepper to taste
2 tsp Dijon mustard (or more to taste)
Sometimes I add a dash of paprika too
In a large bowl, break the eggs into smaller pieces using a fork. Mix all the above ingredients, cover and chill for at least an hour.
I put the egg salad on whole wheat toast and added some lettuce. The above makes about 4 sandwiches, depending on how much you put on each.

Sounds great! This is perfect for lunch or a easy weeknight meal. I've never actually made egg salad. Thanks for posting this:)
I LOVE egg salad, but rarely make it! And don't worry, I had to look up how to make a hard boiled egg too a few years ago - everyone does it differently!
